This griddle is even better than I thought it'd be when I bought it. First of all let me comment on the size of it. It seems the conventional way size is referred to for skillets and griddles is by measuring at the top of the pan, not at the bottom. So a 12-inch skillet has only 10-inches of diameter at the bottom. The fairly tall sloping sides render a 12-inch opening at the top.
The 1/2-inch sides of the griddle allow it to be 10 ½-inches at the top but it still has 9 ½-inches at the base. So the useful area at the bottom of the 10 ½ inch griddle is only 11% smaller than the large and very heavy 12 inch skillet. I find myself reaching for this when I don't need a skillet for holding a large volume of food or for frying bacon. It's worth it just for the way pancakes and grilled sandwiches turn out. Grilled sandwiches should have a bit of crispness to them, I've never been able to get that with non-stick pans.
Following the instructions, I washed it in hot water before using. Then using a bit of bacon grease from the `fridge, I heated the pan, melted the grease and turned off the heat and let the pan cool. Then I wiped it off and sprayed with Pam. I've had no problems with pancakes sticking and eggs turn out perfectly. I'll keep a couple of non-stick pans for tomato based dishes and such but cast iron is the way I'm cooking most food from now on. I bought a full range of skillets and the 5 and 7 qt. Dutch Ovens and have been happy with them all.
p.s. Some people have complained about the griddle not heating evenly; after I've pre-heated it, I move it to one side of my electric burner for about 30 seconds and then do the same for the other side. This seems to work well evening the temperature around the surface of the griddle. Pancakes and grilled cheese (my touchstone tests) come out perfectly done and evenly browned.

On a number of threads about Lodge cast-iron products people are worried about cracking due to high heat or temperature change by adding water to a hot pan. As to the latter fear, I only add 1/4 to 1/2 inch of water to a hot skillet to deglaze the pan. As far as cracking goes, I can tell you what I did to my 10-1/2 inch round griddle. I put it on Med-Hi heat on the large burner on my electric range and set a timer for 4 minutes. I then would come back, summoned by the timer and brush a tiny bit of canola oil on the pan and let it cool before putting it away. That was the plan, anyway I forgot and woke up about 7 hours later and went to the kitchen and found the griddle glowing gently in the early morning light. For those interested in what happens should you be as foolish as I, you'd find your beautiful seasoning flaking off the pan's surface. After it cooled, I wiped it with a paper towel and found the gray metallic sheen of unseasoned cast-iron. But the pan is otherwise undamaged. I'm going to sand it smooth to start with a better surface than Lodge provides from the factory and then re-season it. I expect it to be even better than new when I'm done. I can't think of another pan metal that could take this sort of abuse and not be damaged beyond repair. Btw, I've closely inspected the griddle since the "incident" and heated it to steak-searing temperatures and no cracks have appeared. I couldn't be more pleased about the durability of this product.
