Customer Review: Lodge 5qt dutch oven Summary: 5 StarsThis is a great dutch oven. Consider the price difference between this and your favorite Le Crueset dutch oven. I bought this for one of my daughters and she uses it regularly. I teamed up the dutch oven with the book "Artisan Bread in Five Minutes a Day: The Discovery That Revolutionizes Home Baking." A nice combo even before the taking Amazon's prices into account.
Customer Review: The perfect size for no-knead bread Summary: 5 StarsI bought this (actually, 2 of them for 2 different kitchens) specifically to make Jim Leahey's No-Knead Bread recipe. I was a little concerned because the recipe calls for a 6-7 quart Dutch oven. However, this one has plenty of room and I think the smaller size has to do a better job of concentrating steam and heat. At any rate, my bread comes out great!
One reviewer complained of the preseasoning being done with Pam. Actually, Pam is a suggestion in their manual if you want to improve the non-stickiness but I think the factory coating is something more durable. In both my purchases, the coatings were fine. A Dutch oven is likely to spend more time in the wash water than a cast iron skillet just because of the nature of what you cook in it so the most important feature is a smooth interior finish which you can re-season as you like.

A friend told me once that slow cookers were fine, but anything cooked in a slow cooker could not compare to the flavor of food cooked in a cast iron dutch oven; she was right. I cooked a pork roast first thing in this dutch oven and was overwhelmed by the depth of flavor the roast had.
One design feature I love about this oven is there are little fat spikes on the underside of the lid. This allows any liquid (au jus/flavor) to drip back onto the contents of the oven. This keeps the food self-basted and moist.
And yes, you'll need to season your pan. I've never bought pre-seasoned cast iron that I didn't need to season additionally myself. Unfortunately, a truly well-seasoned pot/pan requires TIME, and this just wouldn't be cost effective for any company. So I oiled my dutch oven with vegetable oil and put it in the oven at 250 degrees for about 4 hours. It was worth it. An aunt who got some of that first dutch oven pork roast called me and wanted to know what I had done differently from the last roast to that one. "Did you season it differently?" she asked. "Not the roast," I answered, "the pot."
By the time my nephew inherits this dutch oven, it'll be seasoned to perfection.
